Smoked Chicken and Spinach Pasta
This delicious Smoked Chicken and Spinach Pasta recipe is good enough to serve in a restaurant. Warning! You may have to double this recipe as friends and family will most likely be asking for seconds.
Ingredients
• 300g maccheroni dried pasta (or other small pasta)
• 150g pumpkin, peeled and cut into 1cm cubes
• 4-6 cups hot water
• 1/2 cup KRAFT Cream Cheese Spread
• 1/2 cup milk
• 1 tablespoon seeded mustard 250g
• 2 tsp Tanami Fire - Outback Pride 100
• 2 smoked chicken breasts, sliced
• 2 spring onions, finely chopped
• 1 cup baby spinach leaves
• Salt and freshly ground black pepper, to taste
• 1/3 cup Macadamias, roughly chopped
Method
- PLACE pasta, pumpkin and water in a large bowl and cook on HIGH (850W) for 12-15 minutes or until pasta is cooked and pumpkin tender. Drain and set aside.
- COMBINE cheese spread, milk and mustard in medium bowl, heat on HIGH (850W) for 2-3 minutes, stirring occasionally. Stir in chicken, spring onions, spinach, salt and pepper, return to the microwave and cook HIGH (850W) for 2-3 minutes.
- STIR cheese mixture and pumpkin into cooked pasta and mix until well combined. Serve into bowls and top with Macadamia nuts.
